How to make a Poke Cake:

Make any cake you want, and once you pull it out of the oven let it cool and then poke holes in the cake with a fork. Set aside. In a bowl pour the contents of a Jello package, you can choose whatever flavor or color you want,
and then add 1 cup of boiling water to the powder. Mix well and then add 1/2 a cup of cold water and mix again. Once the jello is fully mixed with the water pour it over the cake. Once you have poured all the jello liquid into the cake, refrigerate for at least an hour.

**Here I made a lemon cake and used a Strawberry Jello package. It may have looked better if I had used a white cake, but I really wanted to combine the lemon and strawberry flavors. It worked quite nicely and it tasted great. You could clearly taste the lemon and the strawberry. As a topping I used Cool Whip. I did not want to add a regular sweet frosting to this cake. Cool Whip is a great alternative to frosting if you do not want your cake to be super sweet.
